Mung Bean & Vegetable Soup Instruction (Small Kit)

Yield: Approx 4.5 cups

  • 1 Mung Bliss spice packet
  • 1 Mung Bliss dried mung bean packet
  • 1/4 cup onion, diced
  • 1/2 clove garlic, chopped
  • 1 tsp chopped ginger
  • 1.5 tsp ghee butter or olive oil
  • 1.5 tsp apple cider vinegar
  • 1.5 cups diced vegetables of your choice (carrots, celery, green beans, zucchini, and/or broccoli)
  • 1 cup of water
  • 1 can (14 oz) broth of your choice
  • Optional: Green onion & cilantro to garnish

  • Soak 1 packet of the mung beans in 2 cups of water overnight or for 10 hours.
  • Drain and wash mung bean twice with fresh cold water.
  • Combine 1 packet of spice kit with all ingredients in an Insta-Pot and cook for 5 minutes with the vent closed or a pressure cooker. (If you don’t have a pressure cooker, combine in a large pot and cook for 1 hour or until mung beans are tender).
  • Add salt and pepper as desired
  • Garnish with chopped green onion and cilantro
